About Experience

  • The Vessel: The dish takes its name from the urn-shaped clay pot in which it is cooked.

  • Ingredients: It typically consists of cuts of beef or lamb (like shank or neck), preserved lemons, garlic, saffron, cumin, olive oil, and sometimes smen (fermented butter).

  • Traditional Cooking: The sealed pot is brought to a local farnatchi (the furnace that heats a communal Hammam), where it is buried in the hot ashes and slow-cooked for 5 to 7 hours until the meat is incredibly tender.
